Their business is in servers, so they are highly trained to manage them and take care of them in a preventative way. When they have it under control, then you can focus solely on your business at hand and leave the technology to them.
When you do have your own servers, then you should have the software available so that end users or even people accessing a website can still see it and know you are working to correct the problem. Problems are attained through each when there are so many requests being made of the system that it simply cannot handle it any longer. The web will fail and then you are losing dollars for every minute that it is down and not functioning properly.
